Pluots, apriums and plumcots are hybrid fruits combining the plum and apricot. We think the best are the early season variety with a red, fuzzy skin and a crimson, succulent interior. As these hybrids are an American innovation, an American spirit is an appropriate partner. This makes 2 cocktails.
2 plucots, peeled and pitted
4 ounces bourbon
1 ounce Southern Comfort
1/2 ounce lemon juice
Chilled soda water
Put fruit, bourbon, Southern Comfort, and lemon juice in a blender and puree for 20 seconds. Divide the puree equally into two ice-filled highball glasses. Top with soda and stir. No garnish.
