This Cuban classic, which saw its first revival during Prohibition, has come racing back to popularity in the last decade. Mojitos are easy drinks to assemble, but attention should be paid to balancing the sweet syrup and tangy lime to let the mint shine through.
Mojito
2 ounces white rum
1 teaspoon simple syrup
1 ounce fresh lime juice
5 mint leaves
Chilled soda water
Muddle syrup, lime juice and mint in a tall, thick-bottom highball glass. Fill the glass with crushed ice, pour in rum and top with soda. Stir until the glass is frosty. Garnish with a mint sprig.
