This is a 2-ingredient drink best served late in the afternoon, in the summer, at an outdoor cafe table. In Paris, of course. Pastis is often served with a drop or two of flavored syrups or liqueur.
Perroquet
1 1/2 ounces pastis
2 dashes peppermint syrup
Pour the ingredients over 3 or 4 ice cubes in an aperitif glass. Fill with cold water or serve with a small carafe of water, as they do in French cafes.
Tasting notes: Traditional anise threaded with mint. Cool and refreshing.
