This wine-based cocktail is adapted from a similar basil-flavored recipe used during London Cocktail Week at the Balfour Bar at St. Bart’s Brewery in London’s Clerkenwell District. Our version offers an easy low-alcohol drink, the combination of basil, almond syrup and soda providing a light refreshing sip with good bar food.
2 ounces red wine
3 to 4 basil leaves, torn
1/2 ounce orgeat syrup
2 drops lemon juice
Chilled soda water
Place all ingredients, except the soda water, into a cocktail shaker with several ice cubes. Shake vigorously for 20 seconds. Add 1 ounce soda water. Shake once and strain into a chilled cocktail glass. Garnish with a bruised basil leaf.
Tasting notes: Herb and almond notes
Next: A whiskey cloud
