This is not a daytime cocktail. The whiskey, rum, and cream push this recipe firmly into the after-dinner category. If you can find it, use Baby Blue, a blue-corn whiskey from Balcones Distillery in Waco, Texas. Another choice, and definitely available, is George Dickel Tennessee Sour Mash.

Midnight Cowboy
2 ounces of whiskey
1 ounce dark rum
1\2 ounce heavy cream

Pour all ingredients into a cocktail shaker with several ice cubes. Shake for 20 seconds. Strain into a chilled cocktail glass. While this can be left without a garnish, a classy upgrade would be a light dusting of grated bitter sweet chocolate.

Tasting notes: The whiskey and rum play well with the cream.
