Seedless, watermelon cocktail

Watermelon has been a cultivated fruit for more than 4,000 years and, for just as long, people probably have been trying to find a way to breed out the seeds. A little muddling and a fine mesh strainer take care of seeds in this recipe and produce a distinctive, delicate fruit flavor and color.

Seedless
2 ounces light tequila Seedless vert
1/2 cup cubed watermelon
1/2 ounce fresh lime juice
1/4 ounce triple sec or simple syrup

Cut enough watermelon in small cubes to fill a 1/2 cup measure. Save one cube for the garnish. Put all the ingredients in a cocktail shaker. Gently muddle the watermelon in a cocktail shaker. Add ice, tequila and lime juice, and triple sec. Shake vigorously. Pour through a fine-mesh strainer into a chilled cocktail glass. Drop in the reserved watermelon cube.

Tasting notes: Delicious. The riper the watermelon, the deeper the taste of the drink.
