Creme de banana liqueur has a yellow color that makes you shudder, but used moderately, with citrus and sparkling wine, it provides an extremely pleasant fruit note to this new addition on the Sunday brunch drink list. Cara cara oranges have a deeper color and stronger flavor than plain navel oranges.
1 1/2 ounce fresh cara cara or navel orange juice
1 ounce creme de banana
2 dashes orange bitters
4 ounces chilled sparkling wine
Place one very large or three regular ice cubes in a tall, wide-mouth wine glass. Add the juice, creme de banana and bitter. Stir and then add the sparkling wine. Garnish with a long orange peel or orange slice.
Tasting notes: Low acid cara cara brings the sweetness through, and delivers a pleasing complexity in a brunch drink.
