This is a revision of the famed Black Velvet, the original being a mixture of Guinness Stout and Champagne. Our version for the Super Bowl bound Seattle Seahawks throws a locally-sourced cast into the mix. We use Domaine Ste. Michelle Brut, a Columbia Valley sparkler, topped by Extra Stout from Seattle’s Pike Brewing Co. Make sure all ingredients and the glasses are chilled.
Domaine Ste. Michelle Brut (or other dry sparkling wine)
Pike Brewing Co. Extra Stout (or another dark, craft-made beer)
Half fill a champagne flute or stemmed beer glass with sparkling wine. Top with the porter, but pour slowly and carefully down the side of the glass over the back of a spoon. The slow pour of the beer gently combines the drink.
Tasting notes: Rich and decadent; nearly a meal in itself.
