A sip of sparkling wine, dressed with bitters and a little tropical fruit, seems a fit and indulgent drink for the holiday morning. The bags of cubed mango in the grocery freezer is a great substitute for a fresh mango. This recipe should serve 8. A non-alcoholic version, Mango Mocktail, substitutes sparkling cider for the sparkling wine. Merry Christmas, friends, and many happy returns of the season.
Juice of 1 lime
3 cups mango, in 1/2-inch cubes
1 bottle chilled sparkling wine
Place the lime juice and 2 cups cubed mango in the blender and pulse until smooth. Pour into a chilled pitched and gently stir in the sparkling wine. Divide the remaining mango cubes among 8 flutes and top with the mango-sparkling wine mix. Be delicious this holiday morn.
