The quality and type of rum make a big difference in this drink. This original from Bermuda, recorded in bartender Salvatore Calabrese’s book “Complete Home Bartender’s Guide,” is made with the local Gossens dark rum. The deep-tasting spirit and ginger beer give a pirate’s swagger. Arrgh!

Dark and Stormy
1 1/2 ounces dark rum
1/2 ounce fresh lime juice
Chilled ginger beer

Pour rum and lime juice into an ice-filled goblet or highball glass. Top with ginger beer and garnish with a lime twist.
